Although his bakery stand is new, Daniel Frederick still employs traditional techniques in crafting his delicious cassava bread. Fresh ground manioc is mixed with coconut, sugar and water to form a dense, flat bread similar to a thick pancake. The coconut and sugar add a touch of sweetness that makes this bread addictive.

The bakery is over in the Kalinago Territory on the east coast, so it's a bit of a trip if you're staying in Roseau. But if you're visiting the Kalinago Village it's worth a stop, and you can also hit it up on your way to/from the airport. I'm not sure that I pinned it just right, but any of the locals could quickly point it out.

"Overall we loved it, though it would have been good to know that you can't drive to the hotel if you don't have a proper 4WD as it is located at the end of a long and steep tarished road. "The staff were great, very friendly and accommodating throughout our stay. However, the hotel itself needs some major improvements, especially the room. The AC was leaking, leaving a puddle of water on the floor, and there weren’t enough towels to soak it up. The couch and chairs were very worn out, when you sit down, you sink right into them, and the tables and counters were peeling at the bottom. There were several other small issues that could use attention as well. Overall, it’s a very beautiful hotel with so much potential, and we still enjoyed our stay thanks to the wonderful staff. "
