Although his bakery stand is new, Daniel Frederick still employs traditional techniques in crafting his delicious cassava bread. Fresh ground manioc is mixed with coconut, sugar and water to form a dense, flat bread similar to a thick pancake. The coconut and sugar add a touch of sweetness that makes this bread addictive.

The bakery is over in the Kalinago Territory on the east coast, so it's a bit of a trip if you're staying in Roseau. But if you're visiting the Kalinago Village it's worth a stop, and you can also hit it up on your way to/from the airport. I'm not sure that I pinned it just right, but any of the locals could quickly point it out.

"My two adult children and I enjoyed a comfortable stay in two private bedrooms of the home of the gentleman that owns and lives in the advertised property. He was a kind host, graciously welcoming us when we arrived far too late in the evening and waking before 5am to see us off for our early morning departure. "The property is nestled away on the country side of the island. We stayed in the honeymoon suite only steps away from the ocean . The pool is made of stones and is refreshing , especially with a cocktail. We scheduled a couples massage with hot rocks and let the stress of the World melt away . What a lovely retreat with Nature ! We will be back soon!"
